This quick and simple recipe is the perfect dish to prepare especially as an after school snack once the kids come back hungry from school! I have substituted store bought breadcrumbs with homemade whole wheat breadcrumbs and refined flour with arrowroot flour, and they taste absolutely delicious and crunchy.
Some of the ingredients used in this recipe are
Ingredients for the fish marinade
Fish -225 gm
Olive oil-2 tbsp
Salt & pepper to taste
Ingredients for the breadcrumbs mixture
Breadcrumbs -4 tbsp
Parmesan cheese-2-3 tbsp
Salt & pepper -to taste
Chilli flakes (optional)-to taste
Ingredients for the egg dip
Egg-1
Mayonnaise-1 tbsp
Arrowroot flour-1 tbsp
Salt & pepper - to taste
Directions
1.Marinade the fish in olive oil, salt and pepper and keep it aside .
2.In a bowl, add all the ingredients to prepare the breadcrumb mixture and mix it well. Keep it aside
3.In a bowl , add all the ingredients of the egg dip and mix it well and keep it aside .
4.Once everything is prepared, add the egg mixture to the fish and mix it well.
5.In a pan , add olive oil. Meanwhile , gently take the fish ,dip it in the breadcrumb mixture and make sure it’s well coated. Now gently fry the fishuntil it’s crispy and golden brown. Serve hot with mayonnaise or ketchup.
