Healthy date walnut & coffee cake


This healthy cake is the most delicious and moist cake. It's easy to prepare ,perfect as a teatime snack as well as birthday parties.







Some of the ingredients used in this recipe are






Ingredients


Dates 200 gm roughly chopped

Hot coffee 150 ml

Baking soda 1 tsp

Olive Oil 100 ml

Jaggery powder /Dark brown sugar 130 gm

Yogurt 80 gm

Vanilla extract -1 tsp

Whole wheat flour 125 gm

Oatmeal flour 125 gm

Baking powder 1 tbsp

Salt - a pinch

Walnut 90 gm roughly chopped

Walnut whole for garnish


Instructions


1.Soak the dates with coffee,olive oil and baking soda for 20 minutes .


2.Preheat over to 175 C. Grease the cake mould with little oil and add parmanent paper to it.


3.In a bowl , add dates,brown sugar ,yogurt and vanilla and whisk it well & keep it aside

4.In another bowl , add flour ,baking powder,salt and walnuts


4.Now mix the dry ingredients along with the wet ingredients and mix it well(don’t over mix)


5.Add the batter to the mould , garnish with walnuts and let it bake for 45-55 minutes or until the cake it done.
