Healthy Carrot Muffins


These carrot muffins are healthy,easy and absolutely delicious. These are made with whole wheat flour and without refined sugar. So you can now enjoy this delicious treat without the guilt.






Some of the ingredients used in this recipe are







Ingredients


Whole wheat flour- 157.5 gm

Jaggery powder- 50 gm

Baking powder- 1/2 tsp

Baking soda- 1/2 tsp

Cinnamon powder-1 tsp

Eggs- 2

Milk- 90- ml

Carrot- 100 gm grated

Raisins- 60 gm

Vegetable Oil- 120 gm


Directions


1.Preheat the oven at 180 C. In a bowl, add whole wheat flour, baking powder, baking soda & cinnamon powder and mix it well and keep it aside.


2.In an another bowl ,add jaggery powder, oil, beat it well using an electric mixer. Now add the eggs (one at a time)and beat it well until the color changes slightly


3.Now add and mix both the the ingredients from point no 1 and 2 above along with grated carrot and mix it well for a few minutes until it’s all well combined.


4.Now add the milk  to this mixture and continue to mix it until it’s well combined.


5.Now line the cake mould/muffin mould with greased parchment paper, pour the batter into this and bake it for 35 minutes at 180 C, or until the muffins are done. Once done, keep it outside at room temperature for 30 minutes and serve warm.
