Healthy Almond & Coconut Cake


This cake is the most delicious & moist cake you’ll ever eat. It’s a perfect tea time or brunch recipe and you can enjoy it without the guilt .






Some of the ingredients used in this recipe are






Ingredients


Almond flour-180 gm

Dessicated coconut 60gm

Salt -1/4 tsp

Raw Brown sugar(healthier option) /Caster sugar -250 gm

Eggs -4

Vanilla extract -1tsp

Butter -150 gm

Almond flakes-2 tbsp

Icing sugar (optional) for garnish


For the glaze (optional) you can avoid this for a healthier option


40gm room temperature milk

80gm powdered & strained sugar

(Mix both continuously in a bowl and set it aside)


Directions


1.Preheat oven to 180C


2.In a bowl add the almond flour ,coconut ,salt and sugar and whisk it until well combined


3.In a bowl ,add eggs ,vanilla and mix it well using a hand blender .Now add butter and continue mixing it until it’s well combined .


4.Add the wet ingredients and dry ingredients together and gently mix it well until it’s well combined.(don’t over mix it)


5.Transfer this to the cake mould and bake it for 35-40 minutes or until the cake it done .


6.Let the cake cool down to room temperature. Drizzle icing sugar on top and sprinkle some almond flakes on top immediately so that the almonds sticks to the cake. Enjoy.
