These gorgeous, quick and easy roasted hasselback potatoes are a perfect side dish for this Easter. With just a handful of ingredients and hardly any effort ,you can prepare this stunning and comforting dish leaving your guest drooling on your dining table !
Some of the ingredients used in this recipe are

4-5 potatoes
1/4 cup extra virgin olive oil
Salt to taste
4 garlic cloves chopped
Butter - 1-2 tbsp or as much as you like.
Rosemary - a few sprigs
Directions
1.Pre heat the oven 180C. Slice the potatoes Hasselback (approximately 2mm thick). Rub/sprinkle with 1 1/2 tsp oil and salt making sure the potatoes are well coated.Transfer these on a baking tray and bake them for 30 minutes.
2.Gently remove them from the oven , add more olive oil and salt if required and transfer back in the oven and bake them for another 45 -50 minutes.
3.Meanwhile, in a frying pan, add olive oil and fry the garlic until slightly golden brown and keep it aside.
4.Remove the potatoes once again from the oven ,brush some more butter, add the fried garlic ,add the rosemary sprigs and bake them once again for another 5 minutes or until the potatoes are done. (make sure the garlic and the rosemary don’t burn or become very dark as they may taste bitter). Serve hot!
