Garden salad with fresh mozzarella

This salad is perfect for a light and healthy lunch.Its refreshing, fresh, colorful and extremely delicious. You could also add some grilled chicken, prawns or baked sweet potatoes to this salad which would add to its flavour and make it wholesome.







Ingredients

Romaine lettuce leaves -a handful

Ice berg lettuce-a handful

Lollo rosso leaves -a handful

Arugula leaves- a handful

Carrots-5-7 thin slices

Cucumber-3-4 thin slices

Cherry tomato cut into half- 4-5

Black olives -2-3

For the dressing


Freshly squeezed lemon juice- 1/2 tbsp

Salt and black pepper-as per taste

Olive oil extra virgin- 1 tbsp

For pesto dressing


Basil leaves- 1/4 cup

Garlic-3 cloves

Olive oil- 1/4 cup

Pine nuts/walnuts- 2 tbsp

Salt and pepper to taste

Lemon juice- 1 tbsp


Method

  1. Add the pesto dressing ingredients in a blender and blend it to make a dressing.Once done, add a few tablespoons of this dressing to the fresh mozerella and let it marinade for a few minutes..

  2. In a another bowl ,add the ingredients of the salad dressing, mix well and keep aside.

  3. Assemble the salad leaves in a bowl, and pour both the dressings on top of the salad. Give it a good toss and serve it with fresh mozzarella.
