Fried rice in a chili bean sauce


This delicious and spicy vegetable fried rice is really flavoursome and very easy to prepare. This sauce can be make with just 4 simple ingredients and it can be used in stir fried vegetables, noodles,chicken or even seafood!






Some of the ingredients used in this recipe are





Ingredients


Onion- 1

Red capsicum -1/2 sliced

Mushroom -4-5 sliced and cooked.

Carrot- medium

Spring onion (greens) -1-2

Red chilli-1 chopped

Ginger -1 inch finely chopped

Garlic -2 cloves

Coriander leaves -for garnish

Cashew nuts -roasted -6-8

Oil- 2 tbsp

Cooked rice -100 -150gm (preferably

Jasmine or brown).


Ingredients for the sauce


Raw honey- 1.5 tbsp

Chili bean sauce -1.5 tosp

Light soya sauce -1.5 tbsp

Shaoxing rice wine -1.5 tbsp


Directions


1. Chop all the vegetables and keep them ready


2.In a bowl add all the ingredients of the sauce ,mix it well and keep it aside.


3.In a wok, add oil, fry the onions until transcluscent .Add all the veggies and cook them for a few minutes (Don'tovercook them-this is very important as the vegetables will loose their crunch). Now add the ginger and garlic and continue stirring very gently.


4.Once done, add the cooked rice ,the chili bean sauce and give it a good mix.

  Add the roasted cashewnuts and garnish with some spring onions and coriander leaves. Serve hot.
