This salad makes for a perfect appetiser ,or a light and healthy lunch. The pan-seared shrimp ,creamy avocado and the citrusy and juicy orange dressing makes this salad perfect for a hot summer day.

Ingredients for the dressing
Orange juice -2 tbsp
Lemon juice -1 tsp
Olive oil -1 tsp
Raw brown sugar -3/4 tsp
Salt and pepper -to taste
Ingredients for the salad
Rocket leaves -65 gm
Roasted almonds - 5-6
Avocado - 1/2 cut in slices
Ingredients for the prawns
Prawns -4-5 medium size devined and deshelled
Arrowroot flour- 1 tbsp
Salt and pepper -to taste
Olive oil- 1 .5 tbsp
Garlic- 3 chopped
Spring onion(white)-1.5 tbsp
Red chili flakes -to taste
Directions
1.In a bowl , add all the ingredients of the dressing and mix it well. Keep it aside .
2.Marinade the prawns in arrowroot flour,salt and pepper and keep it aside.
3.In a frying pan , add olive oil, fry the garlic and spring onion white and chili flakes . Fry it for 2 minutes . Add the prawns and fry them until they are very cooked . Keep them aside.
4.Assemble the rocket leaves ,salad dressing and avocado and toss it well. Now add fried prawns and garnish it with orange wedges and spring onion greens.
