Duchess potatoes are a classic and elegant side dish made from mashed potatoes, enriched with egg yolks and piped into beautiful rosettes or shapes before being baked until golden.

Ingredients
400 gm potatoes, peeled and cut into chunks (4-5 medium size)
25 gm parmesan cheese
25 gm unsalted butter, softened/melted + 2-3 tbsp cream for more flavour
1 egg yolks
Salt and pepper to taste
Optional: a pinch of Nutmeg or herbs for extra flavor
Instructions
1.Boil the potato chunks in salted water until tender. Drain them thoroughly.
2.Mash the boiled potatoes until smooth, or use a potato ricer for a finer texture.
3.Mix in the softened butter , cream and egg yolks. Season with salt and pepper to taste. Optionally, add nutmeg or herbs for extra flavor.
4.Transfer the mashed potato mixture to a piping bag and pipe rosettes or shapes onto a baking sheet. Alternatively, you can use a spoon to create decorative patterns.
5.Bake in a preheated oven at 400°F (200°C) for 10 minutes until they are slightly brown.
6.Remove them from the oven, and brush them with slight butter and put them back into the oven and bake it again for 6-7 minutes or until its baked properly and golden brown from the top.
7.Serve the Duchess potatoes hot as a delightful and visually appealing side dish.
