Dragonfruit salad with a chili lime dressing



This is a refreshing,nutritious,vibrant,light and healthy salad which is perfect for any occasion.

It’s takes only 15 min to make this and is super delicious .






Some of the ingredients used in this salad are






Ingredients for the salad


Dragon fruit- 3 (red colour)

Kiwi- 2

Pomegranate - 1/2 cup

Orange/ pineapple (optional)- 1/2 orange or a few slices of pineapple

Kaffir lime leaves- 4-5 thinly sliced and fried.



Ingredients for the dressing


Raw brown sugar- 2 tsp

Lemon juice- 1 tsp

Fish sauce- 2 tsp

Thai chili- 1



Directions


1.In a bowl add the  ingredients of the dressing ,mix it well and keep it aside.


2.Scoop out the pulp of the dragonfruit and keep only the out skin/shells aside. Cut the dragon fruit into small bite size pieces and keep it aside.


3.Cut the kiwi, orange, pineapple  into small bite size pieces and keep it in a bowl (NOTE- do not mix the dragon fruit with the other fruits as the colour from the  dragon fruit will get transferred to the other fruits.


4.Pour the dressing on top of these cut fruits and mix it well.


5.Now, slowly using a spoon transfer the dragon fruit in the dragon fruit shells, followed by the rest of the fruits. Drizzle some more dressing on top . Garnish with fried kaffir lime leaves.

Serve cold.
