This delicous cripy Thai baby potatoes in a chili lime dressing is a perfect mix of beautiful flavours such as spicy,sweet,salty and sour. Its easy to prepare and pairs well with grilled meat,chicken,seafood or grilled vegetables.

Ingredients for the dressing
Lemon juice - 5 lemons
Fish sauce -4 tbsp
Sugar -3 tbsp
Garlic -1 clove
Thai chili -1
Ingredients for the salad
Baby potatoes -1/2 kg
Cherry tomatoes-10-12 sliced
Cucumber -1/4 sliced
Basil leaves -5-7
Onion sliced -1/4
Spring onion (greens)-1 tbsp
Directions
1.Using a mortar and pestle pond the garlic and the Thai chilli and keep it aside.
2.For the dressing,in a bowl add the fish sauce , lemon and brown sugar and and mix it well. Add the pounded garlic and chilli paste to this and mix it again.
3.In a saucepan ,add water and bring it to a boil. Add the potatoes and let them cook until they are 90./. done.
4.In a plate , add arrowroot powder , dip the potatoes in it and make sure they are well coated.
5.In a frying pan, add oil and cook the potatoes until they are nice and crispy.
6.In a serving bowl, add these crispy potatoes along with cucumbers,tomatoes,onions, basil and spring onion greens . Pour the dressing on top of it and give it a good mix. Serve warm.
