Crispy chicken salad with avocado and roasted peanuts



This crispy chicken salad with avocado and roasted peanuts is a delightful and satisfying dish that can be prepared really quickly! Tender, succulent pieces of chicken are coated with a crispy, golden-brown crust, adding a delightful crunch to the salad. Honestly, it's the kind of salad that makes you forget you're actually eating something healthy!






Some of the ingredients used in this recipe are





Ingredients for the chicken


Chicken -140gm (cut in thin medium strips/chicken supreme)

Garlic -2

Salt and pepper -to taste 

Arrowroot flour -1 tbsp 

Egg-1

Breadcrumbs-3tbsp + Parmesan/Amul cheese cube-2 tbsp +Arrowroot flour-1 tsp 


Ingredients for the salad


Lettuce -65 gm

Avocado -1/2

Salt and pepper -to taste 

Olive oil-1 tbsp 

Roasted peanuts -2 tbsp 

Parmesan cheese - as per taste 


Ingredients for the dressing


Djorn Mustard -1/2 tbsp 

Lemon zest -1/2 lemon 

Lemon juice -1/2 

Raw brown sugar- 1/2 tsp 


1.In a bowl , mix all ingredients of the dressing and keep it aside .


2.In another bowl ,add all the ingredients of the salad and pour the dressing on top. Mix it well and keep it aside .


3.Marinade the chicken with garlic, salt and pepper and keep it aside for 15 minutes.


4.In a plate , add breadcrumbs, cheese, salt ,pepper and give it a good mix .Keep it aside .


3.In a small bowl , crack an egg ,give it a whisk and keep it aside.


4.In a pan add olive oil. Take the marinated chicken, coat it well with arrowroot flour ,then dip it the egg followed by the breadcrumbs mixture and let it cook for a few minutes on both the sides or until the chicken is well cooked ,golden brown & crunchy. 


5.Place these crunchy chicken strips on top of the salad . Garnish with lemon wedges and Parmesan cheese
