Creamy Penne Pasta with Mushrooms and Mascarpone Cheese is a delicious and indulgent dish. This a quick, easy and delicious recipe which you can prepare in just 15 minutes. You can also add chicken ,broccoli, sun-dried tomatoes, prawns and grated nutmeg to this dish as an addition for extra flavour !

1.Penne pasta
2.1 tablespoons olive oil
3.6-8 mushrooms, sliced
4.2 tbsp onion finely minced.
5.3 -4 cloves garlic, minced
6.1/2 cup chicken or vegetable stock
7.1/2 cup mascarpone cheese
8.2-3 tbsp cup heavy cream (optiona)
9.Salt and black pepper to taste
10.Fresh parsley, chopped (for garnish)
11.Grated Parmesan cheese (optional, for serving)
Instructions
1.Cook the penne pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside and keep some pasta water reserved for later
2.In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until they release their moisture and become golden brown.
3.Add minced garlic and onion ,to the mushrooms and sauté for an additional minute until fragrant.
4.Pour in the chicken or vegetable broth and let it simmer for a couple of minutes, allowing the flavors to meld.
5.Reduce the heat to low, and stir in the mascarpone cheese until it melts into the broth, creating a creamy sauce.
6.Pour in the heavy cream(if using), stirring continuously until the sauce is well combined and smooth. Season with salt and black pepper to taste.
7.Add the cooked penne pasta to the skillet, tossing to coat the pasta evenly with the creamy mushroom and mascarpone sauce.
8.Garnish with fresh chopped parsley and, if desired, sprinkle with grated Parmesan cheese.
