Broccoli-1 cup
Carrots -1 chopped
Onion-1 small
Garlic -2 cloves chopped
Potato -1 peeled and boiled
Vegetable stock -2 cups
Milk -1 cup
Olive oil-2 tbsp
Salt and pepper to taste
Toppings for garnish -cream,chopped nuts ,sunflower/ pumpkin seeds
Directions
1.In a pan, add olive oil, garlic onions and fry it for a minute until they are translucent.
2.Add chopped carrots, broccoli and boiled potatoes and sauté it for a few minutes until they start to soften.
3.Pour the stock /water and the milk and let it simmer for 15-20 minutes or until the vegetables are well cooked. Once done ,switch the gas off and let it cool down.
4.Using a hand blender ,gently blend the soup until it's smooth and creamy.
5.Once done, garnish with fresh cream, sunflowers seeds, pistachios , micro greens or any other toppings of your choice. Serve hot
