Cream of Cauliflower Soup


This delicious recipe is easy to prepare , very healthy, packed with vitamins and minerals,is perfect as an appetizer or a nutritious snack for fussy little eaters!







Some of the ingredients used in this recipe are






Ingredients


Cauliflower- 1

Garlic - 3 -4

Onion-1/2

Olive oil- 2 tbsp

Thyme - one sprig or dried thyme- 1/2 tsp

Stock/Water- 1 cup

Lemon juice- - a dash

Milk (optional)- 1/2 cup

Salt & pepper to taste



Directions


1.In a baking tray add the cauliflower, garlic(with skin on),onions, olive oil and thyme ,mix it well and roast it for 20-30 min at 190 C or until its slightly charred and cooked.


2.Squeeze out the garlic and remove the skin . Now add all the roasted ingredients in a pan, add stock and let it simmer for a few minutes. Once done , switch the gas off and let it simmer for a few minutes.


3.Blend it in a blender until it’s a thick puree. Add it pan to the pan, add some milk and cook again for a few minutes. Add salt and pepper to taste. Garnish it with thyme ,olive oil and serve immediately.
