Chicken tagliatelle pasta with a creamy sauce

Ingredients


1.4 ounces tagliatelle pasta (or any wide pasta of your choice)

2.1 tablespoons butter

3.1 Tbsp olive oil

4.1 small chopped onion

5.2 cloves garlic

6.100 ml double cream

7.50 gm mascarporne cream

8.50 gm parmesan cheese

9.1/4 cup chicken/vegetable stock

10.1 chicken breast cut in cubes or 5-6 button mushrooms sliced for a veg option

11.Salt and pepper to taste

12.Optional: Chopped parsley or basil for garnish



Directions


1.Cook the Pasta: Bring a large pot of salted water to a boil. Cook the tagliatelle pasta according to the package instructions until al dente.


2.Prepare the Cheese Sauce: In a saucepan, add olive oil, melt the butter over medium add the onions and garlic and let it cook for a minute or two until the onions are translucent. Add the chicken/mushrooms and cook it until it well cooked.


3.Add Cheeses: Reduce the heat to low. Stir in the cream, grated Parmesan and mascarporne cheeses . Continue stirring until the cheeses are fully melted and the sauce is smooth and creamy.


4.Season the Sauce: Taste the sauce and season with salt and pepper as needed. Remember that the cheeses can add saltiness, so adjust accordingly.


5.Combine Pasta and Sauce: Add the cooked tagliatelle pasta to the cheese sauce. Toss the pasta gently until it's well coated with the creamy sauce.


6.Serve: Plate the pasta into individual dishes or a serving platter. Garnish with chopped parsley or basil if desired and lots of fresh parmesan cheese.
