This is a super nutritious,healthy and wholesome summer salad which can be prepared in less than fifteen minutes. Its a perfect as a weekend lazy lunch or as a quick and easy week night dinner.

Ingredients for the salad
Rocquet/Arugula leaves-a handful
Baby spinach leaves- a handful
Roasted almonds-6-8
Grilled/poached chicken- 1/2 cup
Pineapple-1 cup
Ingredients for the dressing
Lemon juice- 2 tbsp
Brown /palm sugar-2.5 tbsp
Olive oil-1 tbsp
Method
1.In a bowl, prepae the dressing and keep aside
2.In a another bowl,add the salad ingredients and pour the dressing on top of the salad.
3.Give it a good toss. Serve cold
