Chicken Fajita Salad is a delicious way to enjoy Chicken Fajitas! A crisp green salad topped with grilled chicken, creamy avocados ,grilled peppers and onions is brought together with a simple flavorful vinaigrette!
Some of the ingredients used in this recipe are
Ingredients
Chicken -180 gm
Capsicum (red and yellow)-35 gm each
Onion- 1/2 sliced
Lettuce- 60 gm
Avocado- 1/2
Olive oil- 1 tbsp + 1 tbsp for frying
Sour cream/curd- 1 tbsp
Kidney beans (soaked and cooked)- 1/2 cup
Ingreidents for the dressing
Olive oil- 1 tbsp
Lime juice- 1.5 lime
Cilantro- 1 tsp
Garlic-2
Raw brown sugar- 1.5 tsp
Red chilli - as per taste
Cumin powder- 1/2 tsp
Salt- to taste.
Directions
1.In a bowl, add all the ingredients of the dressing mentioned above ,mix it well and keep it aside.
2.Marinade the chicken in this dressing and reserve some of the dressing for later.
3.In a grill pan, add olive oil and grill the chicken. Once done, let it cool down ,slice it and keep it aside.
4.In a bowl, add the lettuce, kidney beans ,cooked chicken, pepper, onion, avocado ,pour some of the reserve dressing on top. Give it a toss and garnish with sour cream and cilantro.
