Chicken and Zucchini Cutlets


These chicken and zucchini cutlets are a delicious and healthy after school snack which has a perfect balance of protein and fibre.






Some of the ingredients used in this recipe are






Ingredients


250 gm boneless,skinless mince

1/2 small zucchini, grated

1 egg

Onion -1 finely chopped

1/2 cup grated Parmesan /amul cube cheese

4 cloves garlic- minced

Cumin powder-1/2 tsp

Coriander powder-1/2 tsp

Chili flakes -as per taste

1 tbsp chopped fresh parsley

1 tbsp chopped mint leaves

1 tsp spring onion greens

Salt and pepper, to taste

Olive oil, for frying



Instructions


1. In a bowl, mix together chicken ,zucchini, egg , cheese, and all the spices and herbs mentioned above . Make round shaped cutlets and keep them aside.


2.Heat olive oil in a large skillet over medium-high heat and fry the cutlets until golden brown and cooked through.


3.Serve hot and enjoy!


Note- adjust the seasonings as per taste.
