This cheesy broccoli & potato soup is so satisfying! It's got a lovely velvety texture, packed with nutrients and is loaded with a pinch of yum.

Ingredients
1.Broccoli-8-10 florets
2.Potato-1/2
3.Carrot-1/4
4.Onion-1/2
5.Red capsicum-1/4
6.Garlic-3-4 cloves
7.Salt & pepper-to taste
8.Vegetable stock/water-1/4 cup
9.Coconut milk-1 1/4 cup
10.Soaked cashew nuts- 1 tbsp
11.Cheddar/Parmesan cheese-1/4 cup
12.Paprika powder-2 tsp
13.Apple cider vinegar- 2 tsp
Directions
1.In a blender add cashews,coconut milk, water,paprika,apple cider vinegar & cheese and blend it well.
2.In a baking tray, add blanched broccoli,blanched carrots, capsicum, parboiled potato, onion & garlic . Add salt , pepper & olive oil. Give it a good stir and roast these vegetables in the over for 30 min at 180C.
3.Once done take them out. Let it cool down and transfer these vegetables into a blender, add some water and blend it until it’s thick purée.
4.Add this purée in a pan followed by the cashew and coconut milk paste and mix it well. Let it simmer on medium heat for 8-10 minutes or until cooked. Garnish with microgreens & pumpkin seeds and serve hot.
