Cheat's pizza with kale and fresh mozzarella

This pizza is the perfect combination of two of my favourite foods- kale and fresh mozzarella.

It's super quick,extremely healthy and very delicious.This is perfect weekend brunch recipe you can enjoy with your family and friends without feeling the guilt.  






Some of the ingredients used in this recipe





Ingredients


Dough


Whole wheat flour-100 gm

Yeast-2 gm

Sugar-2 gm

Salt-2 gm

Water-30 ml

Olive oil-10 ml


Sauce and toppings


Tomato sauce- 3-4 tbsp (recipe given bellow)

Kale- a few leaves roughly chopped

Fresh mozzarella- 1

Assorted baby lettuce- (optional).


Method


1.Prepare and knead the dough with the above mentioned ingredients and allow to rest for 30 min.


2.Preheat the oven to 180 C for ten min.


3.Roll the dough in a round shape until it looks like a nice thin pizza base.(roughly around 10’’-12’’ inches).


3.Add tomato sauce and spread evenly over the round base followed by kale.


4.Bake the pizza for around 30 minutes or until done and the kale is nice and crisp.Remove it and place it on a wide plate.


5.Marinade the mozzarella with some pesto sauce (optional)/olive oil and place it evenly on the pizza once its done. Serve warm.



Home made tomato sauce recipe


Tomatoes – 4 medium size

Onion-1 small finely chopped

Carrots- 1 tbsp finely chopped

Garlic- 3 finely chopped

Celery- 1 tbsp

Salt and pepper to taste

Oil- 1 tbsp

Basil leaves- 6-8 leaves

Chilli flakes (optional)- as per taste



Method


1.In a saucepan boil the tomatoes for 10-12 min or until they are very soft.Peel off the skin

and blend it in a blender until smooth.Strain this sauce to get a smooth consistency.


2.In a pan fry onion,garlic,carrots and celery until slightly brown.Add the blended tomato sauce and cook it for 5-10 minutes on low heat.Add fresh basil leaves,salt and pepper to taste.


3.Once done, blend it until its a smooth paste.



Health/Cooking Tip

1.You can add different types of mushrooms/sun dried tomatoes/chicken to this recipe for more flavours/variations.

2. If using mushrooms,peel off the top skin/layer of the mushroom and gently clean all the dirt from it by using a damp cloth/ napkin and make sure they are cleaned well.Avoid washing the mushrooms as it would absorb a lot of water like a sponge and that would change the flavour and texture of the dish.

3. Use a whole wheat flour or a whole grain flour instead of refined flour to make the pizza base.
