Ceamy prawn bisque


Prawn bisque is a flavourful soup made primarily with prawns (or shrimp), vegetables, and aromatic herbs and spices. It's a rich and creamy soup that often includes a tomato base. This is a perfect recipe for those cozy nights when you feel like eating something flavourful yet light, easy & healthy.







Some of the ingredients used in this recipe are






Ingredients


White wine - 3-4 tbsp

Water -2 -3 cups

Tomato paste -1 tbsp

Double cream -1/2 cup

Onion -1/2

Leek-1/4

Carrot -1/4 chopped

Lemon juice -1 tsp

Salt pepper to taste

Prawns-6-8

Fennel seeds-1/2 tsp

Bay leaf-1

Roasted peanuts (optional)1 tsp



Directions


1.For the stock , in a pan add olive oil , add the prawn shells and tails . Cook them for a few minutes. Add white wine and let it simmer for a few minutes . Add some water and let it continue boiling for ten minutes.


2.In another pan, add olive oil , fry the onions , leeks and carrots . Add the fennel seeds and bay leaves and let it cook for 5 minutes on medium flame until they are softened .


3.Now add the seafood stock to these vegetables and let it simmer for 20-30 minutes on slow flame. Add some lemon juice and salt and pepper to taste.


4.Once done , remove the prawn shells and bay leaf and discard them. And let it cool down . Now using an electric blender , blend the soup until it’s a smooth mixture .


5.Return it back to the pan , add cream and mix it well.


6.In a pan add olive oil ,garlic and fry the prawns . Add salt and pepper to taste .  Once done , keep it aside .


7.For the garnish -in a pan add olive oil, fry a little chopped leek , and roasted peanuts and keep it aside .


8.Transfer the soup into a bowl and garnish with cream , fried prawns and  roasted peanuts mixture. Serve hot
