This is delicious and healthy version of a makhani gravy. It's nutritious and a perfect dish for curry lovers and pairs perfectly with breads or rice.

Ingredients
Carrots- 2 blanched
Peas-1/2 cup boiled and cooked
Cauliflower- a few florets blanched
Beans -5-6 blanched
Salt - to taste
Cumin powder- 1/2 tsp
Garam masala- 1/2 tsp
Coriander powder- 1/2 tsp
Kashmiri chili powder(optional) as per taste
Ingredients for tempering
Urad dal - 1 tsp
Mustard seeds-1/2 tsp
Curry leaves - 8-10
Ginger garlic paste- 1 tbsp
Directions
1.Blanch the carrot and make it into a thick puree and keep it aside.
2.Blanch mixed seeds and keep it aside.
3.In a pan, add oil, mustard seeds, cumin seeds and let it cook until it starts spulterring Add ginger garlic paste and fry it for a minute, add curry leaves, chopped onions, and all the vegetables and let it cook for a few minutes.
4.Add all the spices mentioned and mix it well. Add the carrot puree along with a dash of water and let it cook for a few minutes until done.
5.In a pan, add oil add the mustard seeds .urad salad curry leaves until it starts spluttering. Pour this on the gravy. Serve hot.
