Butter Chicken


This is by far one of my favourite recipes. Its easy ,delicious and a perfect meal especially if you have guests over. This is a simple version and can be prepared relatively quickly.





Some of the ingredients used in this recipe are







1st marination


Chicken-150 gm

Ginger garlic paste 1 tbsp

Lemon juice- 1/2

Kashmiri chili powder- 1/4 tsp

Salt- to taste


2nd marination


Mustard oil- 1 tbsp

Kashmiri chili powder- 1/4 tsp

Garam masala- 1/4 tsp

Coriander powder- 1/2 tsp

Roasted cumin powder- 1/4 tsp

Kastoori methi- 1/2 tsp

Yogurt -2 tbsp


Once the chicken is marinated for a few hours, grill it in a tandoor, grill pan or the oven and cook it until it’s done.



Ingredients for the gravy


Tomatoes- 4-5 or 150 gm

Cashews- 2 tbsp chopped

Melon seeds-2 tbsp

Oil- 1 tsp

Kashmiri chili powder- 1/4 tsp

Garlic - 2 cloves

Ginger- 1/2 inch

Bay leaf-2

Green cardamon-1

Water - enough to boil


Ingredients for the spices which are to be added to the gravy


Kashmiri chili powder -1 tsp

Coriander powder-1 tsp

Salt-to taste

Cumin powder-1/2 tsp

Honey-1-2 tsp

Kastoori methi - a pinch

Ghee- 1 tbsp

Cream- 15 ml



Directions


1.In a saucepan, add water and bring it to a boil . Add all the above ingredients and let it simmer for 20 minutes.Let it cool .Grind it until it’s a smoothened thick  paste and keep to aside.


2.In a pan, add oil, butter, ginger garlic paste and fry it for a minute. Add  kashmiri chili powder ,turmeric powder, coriander powder, salt and cumin powder and let it simmer for a bit until an aroma develops .


3.Add the tomato paste ,mix it well and let it cook for a few minutes. Now add the cooked tandoori chicken, add kastoori methi ,honey and ghee and mix it well.


4. Garnish with fresh cream and serve hot .
