These healthy Mexican inspired burritos are healthy,easy to prepare and extremely delicious.






Some of the ingredients used in this recipe are







Ingredients


1 cup cooked chicken (optional)

1 cup cooked black beans

1 cup cooked rice

1cup shredded cheese (Monterey Jack or Cheddar)

1/2 cup diced onion

1/2 cup diced bell pepper

1/4 cup diced cilantro

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

tortilla wraps

Salsa, guacamole/avocado and sour cream as per taste



Instructions


⁠In a large pan, heat olive oil over medium-high.Add onion and bell pepper; cook until softened. Add garlic, cumin, and chili powder. Add chicken if using & stir to combine


Assembling the burrito


Spread sour cream , beans and rice on tortilla , add the onion mixture.  Sprinkle cheese, salsa ,avocado/guacamole and cilantro.Fold bottom half, then sides, and roll into a tight cylinder. Warm it on a pan if desired. Serve hot
