Burnt Garlic Fried Rice


The perfect burnt garlic fried rice! Its healthy, easy, quick and absoluetly delicious.





Some of the ingredients used in this receipe are






Ingredients


  • 2 cups cooked rice (preferably a day old and cold /room temperature). Use Jasmine rice for a for a more authentic flavour.

  • 10-12 garlic cloves (finely chopped)

  • 1/4 cup spring onions (finely chopped, separate the white and green parts)

  • 1/4 cup mixed vegetables (carrot, bell peppers, corn, finely chopped)

  • 3  light soy sauce (I’ve use Kikkoman brand)

  • 3/4 tablespoon sesame oil

  • 1 /2 tbsp sriracha / chili sauce

  • Salt to taste

  • 1 tablespoon vegetable oil

  • Chili oil- 1-2 tbsp (as per taste)(I have used Boombay chili oil which is preservative free)

  • Fried garlic and spring onion greens - chopped for garnish



Instructions


  1. Heat a large pan or wok on medium heat. Add 1 tablespoon of vegetable oil and let it heat up. Once the oil is hot, add the finely chopped garlic and cook until it becomes brown and crispy, but not burnt. Remove the garlic and set it aside on a paper towel to drain excess oil.


  2. In the same pan, add the white part of the spring onions and sauté for a minute. Then, add the mixed vegetables and cook until they are tender but still crisp (about 3-4 minutes).


  3. Add the cooked rice to the pan and stir-fry on high heat for a few minutes to combine the rice with the vegetables.


  4. In a bowl add the soya sauce, sesame oil and chili sauce ,mix it well( adjust the balance/taste of the sauce if required) and add this to the fried rice . Add some chili oil and turn off the heat and stir in the crispy garlic pieces and the green part of the spring onions.


  5. Serve hot, garnished with a few extra garlic chips and spring onions on top for a crunchy finish.
