Healthy blueberry muffins

These bluberry muffins are a perfect healthy snack,especially if you are a muffin lover.These are loaded with a fresh blueberry fruit pulp,are tasty and easy to prepare,very wholesome and go perfectly well with a nice warm cup of tea in the afternoon.







Ingredients


Whole wheat flour- 60gm

Organic jaggery powder-50 gm

Butter- 50 gm

Egg-1 no

Baking powder-3 gm

Vanilla extract-1 ml

Blueberry pulp (home made with fresh/frozen blueberries)-50 gm


Method


1.Preheat the oven to 200 C.

2.Mix all the above ingredients in a food processor (except the blueberry pulp).

3.Take the desired muffin moulds and fill it until 1/4 full with the batter, followed by a little blueberry pulp followed by the batter once again until 3/4 full.Bake these muffins in the preheated oven for 18-20 min or until done.Serve warm.



Health/Cooking Tip


1.Use organic whole wheat flour/almond flour instead of refined flour for added health benefits.


2.Use a an organic vanilla extract instead of the commercial vanilla essence which contain preservatives and artificial colours.


3.Use raw organic jaggery powder instead of refined sugar.


4.You can either buy fresh blueberries and use them or make a pulp out of it and freeze them.
