This is quick,easy,healthy and delicious salad which is full of antioxidants and burting of amazing flavours. Its perfect as an appetizer or as light and refreshing lunch.

Orange -1
Ricotta - as per taste
Pickled cucumber or regular cucumber -1/2 sliced
Salt to taste
Pineapple Jam -1 tsp
Pesto sauce -1 tbsp
Mixed seeds -1-2 tbsp
Pesto sauce - 1 tbsp
Lettuce
Directions
1.Pre heat the over to 180C. Peel the beetroot, add olive oil , salt and pepper, transfer it in an aluminium foil and roast it for one hour.
2.In a bowl add the pesto sauce along with the pineapple jam , mix it well and keep it aside.
3.In a bowl , add lettuce , orange , beetroot ,cucumber , mixed seeds , the pesto and pineapple jam mixture and toss it well.
4.Garnish with ricotta cheese and serve cold.
