This easy peasy banana bread cake happens to be my son's favourite evening snack.This cake is moist,very delicious,quick and very wholesome.In this recipe I have substituted plain white flour and refined sugar and used organic whole wheat flour and jaggery powder instead.
Ingredients
Chopped over ripe bananas-180 gm
Butter-125 gm
Organic raw jaggery powder-180 gm
Whole wheat flour-150 gm
Eggs-3
Baking soda- 4 gm
Baking powder- 8 gm baking powder
Pure & organic vanilla extract-2 ml
Chopped handful roasted cashews/walnuts (optional)- a handful
Method
1.In a bowl mix the bananas and the jaggery powder with a hand blender until light and fluffy.
2.Add the eggs one at a time and keep mixing very slowly.Then add the flour,baking soda, baking powder and the melted butter. Mix well.
3. Preheat the oven at 200 C for ten min. Take the cake mould and grease it well with butter.Pour the mixture into this mould and bake it for 25-30 minutes or until done.
4.Once done, allow it to cool for a bit and serve warm.
Health/Cooking Tip
1.Use organic whole wheat flour/almond flour instead of refined flour for added health benefits
2.Use a an organic vanilla extract instead of the commercial vanilla essence which contain preservatives and artificial colours.
3.Use raw organic jaggery powder instead of refined sugar
