Baked chicken in a creamy tomato sauce



This is a delicious,healthy and easy recipe which is perfect for a weeknight dinner or a quick and easy meal with your family and friends .








Some of the ingredients used in this recipe are








Ingredients


Chicken boneless breast - 2

Garlic -3-4 chopped

Olive oil- 1 tbsp and more to cook

Salt and pepper- to taste

Rosemary /thyme - a few sprigs or dried

Mozzarella cheese - as much as you like

Parsley to garnish



Ingredients for the Marinara sauce.


2 tbsp extra virgin olive oil

1 onion finely chopped

3 garlic cloves, finely minced

4-5 tomatoes, boiled and roughly chopped (without skin)

1/2 tsp oregano

1/2 tsp salt and pepper

1 tbsp chopped celery

1 Tbsp fresh basil, or parsley finely chopped

Brown sugar- a pinch

1 sprig Thyme- 1 sprig or dried



Directions for the marinara sauce


1.Heat the olive oil in a large saucepan over medium heat.


2.Add the chopped onions and sauté until they become translucent, about 5 minutes.


3.Add the minced garlic ,celery and sauté for an additional 1-2 minutes until fragrant


4.Pour in the diced tomatoes (with their juice) into the saucepan. Stir well.


5.Add dried oregano, basil, thyme  salt, and black pepper and sugar. Stir to combine.


6.Bring the sauce to a simmer, then reduce the heat to low. Let it simmer uncovered for about


7.20-30 minutes, stirring occasionally to prevent sticking.


8.Taste and adjust the seasoning as needed. If you like a smoother, you can use an immersion blender to blend it to your desired consistency.



Directions for the chicken


1.Marinade the chicken and keep it aside for 15 minutes. In a span add olive oil and cook it until it’s 90./. cooked


2.Preheat the oven to 180 C .Now place the chicken in a oven proof dish, add the tomato sauce on the side and place the mozzarella cheese on top and bake it in the oven until the chicken is cooked and the cheese is slightly melted. Garnish with parsley and serve hot.
