Avocado on toast with salmon & poached eggs


Looking for a flavorful savory breakfast? This delicious breakfast is perfect because it's so simple and easy to make! Just top toasted sourdough with avocado ,smoked salmon, poached eggs and drizzle a bit of the ceaser salad dressing !





Some ingredients used in this recipe are







Ingredients


2 slices of bread (sourdough or whole grain)

1 ripe avocado

100g smoked salmon

2 eggs

Salt and pepper to taste

Ceaser salad dressing - 1.5 tbsp

Lemon juice (optional)

Chopped parsley or dill for garnish (optional)

Olive oil-1 tbsp

One tsp -white wine vinegar


Instructions


1.Toast the Bread: Toast the slices of bread to your desired level of crispiness. Drizzle oil oil on top


2.Prepare the Avocado Spread: Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Season with a pinch of salt, pepper, a dash of lemon juice (if desired)


3.Cook the Poached Eggs: Bring a pot of water to a simmer. Add 1 tsp of white wine vinegar. Crack one egg into a small bowl or ramekin. Create a gentle whirlpool in the water and carefully slide the egg into the center. Poach the egg for about 3 minutes for a runny yolk or longer for a firmer yolk. Remove with a slotted spoon and set aside. Repeat with the second egg.


4.Assemble the Toast: Spread the avocado evenly onto the toasted bread slices. Top each slice with smoked salmon.


5.Add the Poached Eggs: Carefully place a poached egg on top of each slice of toast and smoked salmon. Traditionally, a hollandaise sauce is used on top of the eggs but I have added caesar salad dressing instead.


6.Garnish and Serve: Sprinkle some additional salt, pepper, and chopped parsley or dill over the poached eggs if desired.
