Avocado on toast with poached eggs & roasted tomatoes



Avocado on toast with poached eggs and roasted cherry tomatoes is a delicious and nutritious dish that's popular for breakfast or brunch. This delicious breakfast recipe is perfect because it's simple, easy and very flavourful! Just add avocado, poached eggs ,

Feta cheese and roasted cherry tomatoes on top of the sourdough bread and you are

done!

Ingredients for the poached eggs


White wine vinegar-1 tsp

Eggs-2

Salt- a pinch

Water for simmering the eggs.



Directions


1.Choose Fresh Eggs: Fresh eggs work best for poaching. The whites hold together better when the eggs are fresh.


2.Prepare a Poaching Liquid: Fill a wide saucepan,add a splash of white vinegar (about 1-tsp) to the water.


3.Heat the Water: Bring the water to a gentle simmer over medium heat. It should be hot but not boiling vigorously.


4.Crack the Eggs: Crack each egg into a small bowl or cup, being careful not to break the yolk.


5.Create a Whirlpool (Optional): Swirl the simmering water gently with a spoon to create a whirlpool effect. This can help the egg whites wrap around the yolk for a neater poached egg. If you prefer a simpler method, you can skip this step.


6.Add the Eggs: Carefully lower each egg into the simmering water, one at a time. You can also use the small bowl or cup to slide the egg gently into the water.


7.Poach the Eggs: Let the eggs poach for about 2.5 minutes for a runny yolk or longer if you prefer a firmer yolk.


8.Drain and Season: Once the eggs are cooked to your liking, use a slotted spoon to lift them out of the water, allowing excess water to drain. Once done, keep it on a plate. Season with salt and pepper to taste.




Ingredients for roasting the cherry tomatoes


Cherry tomatoes- 5-6

Olive oil- 1 tbsp

Salt and pepper to taste



Directions


On a baking tray place the cherry tomatoes, drizzle olive oil, salt and pepper and mix it well. In a pre heated oven roast these tomatoes at 180 C for 15 minutes.



Ingredients for assembling


Sour dough bread - 2 slices toasted

Avocado - 1/2 sliced

Feta cheese- as per taste.

Poached eggs-2

Coriander leaves for garnishing

Chili oil and pesto sauce for garnishing(optional)



Directions for assembling


Toast the slices of bread to your desired level of crispiness. Drizzle olive oil on top. Add avocado, roasted cherry tomatoes ,feta cheese  and poached eggs . Drizzle chili oil ,and pesto sauce for extra flavour .Garnish with chili flakes and coriander leaves.
